There are many chanllenges in measuring the pH of food products. This is especially true for food products that have a high solids content that can clog the outer junction of the reference cell. Every glass pH electrode has a reference electrdoe as part of the measuring circuit. The reference cell has a junction, also know as a Salt Bridge, that isolates the inside portion of the cell from the sample being measured. This junction must be free flowing in order to provide continuity with the sample.
Standard pH electrodes will use a porous ceramic frit for a junction. When the junction becomes clogged with solids the continuity with the sample is disrupted and results in sluggish and erratic readings. To overcome this, many of the Hanna Foodcare pH electrdoes use an open junction design in which there is no ceramic barrier but instead an exposed gel known as Viscolene. This open junction design is clogging resistant but it is still possible to force solids into the refeence as force is exerted on the probe to penetrate solid/semisolid samples.
The FC2053 is a technical advancement of the open junction design. The FC2053 has a unique removable sleeve that is used as part of the open junction design. When the readings become sluggish or erratic the sleeve is simply removed and both the sleeve and glass are cleaned. After cleaning a few drops of the HI9071 electrolyte filling gel are added and the sleeve placed back into the probe. Having a clean probe with a fresh reference electrolyte will improve the performance allowing for an extended life and reduced costs associated with frequest replacements.
The first step in cleaning the probe and replacing the gel electrolyte is to remove the PVDF sleeve from the probe. With the probe sensing glass facing up, hold the sleeve with one hand and main body with the other. Gently twist and pull up to remove.
*Note: It is important to pull straight up along the axis of the electrode so as not to bend and damage the glass sensor.
Next rinse the probe and sleeve in DI water. Remove any solids that might be present.
*Note: Never wipe the green glass-sensing portion of the probe with a cloth or other tissue. Doing so can build a static charge and damage the probe.
For a thorough cleaning place the probe in cleaning solution for 15 minutes. Hanna offers a wide range of cleaning solutions including ones specific for meats, cheeses, and yogurts.

After 15 minutes the probe can be rinsed with DI water to remove the cleaning solution from the sensor.With probe sensing surface facing up the next step is to fill the compartment in the probe body with the supplied HI9071 bridge electrolyte.
To put the sleeve back on simply insert back on the probe and make sure the black O-ring is seated into the probe body. Extra electrolyte will be displaced through the open junction when the sleeve is placed back on
With the probe reassembled the excess electrolyte can be rinsed off with DI water. If cleaning solution was used the probe should be placed in storage solution for 1 hour to ensure the glass is properly hydrated and the junction potential stabilized. After replacing the gel electrolyte it is necessary to calibrate the probe wit fresh buffers before taking any measurements.
One final note, when the probe is not being used it is important to store properly. A few drops of the supplied HI70300 storage solution is placed in the storage cap and the cap placed on the probe. This will keep the glass hydrated and prevent the gel from drying out.

Removable sleeve for cleaning of outer reference - A common problem when testing food products is the clogging of the reference junction. Low Temperature Glass - The FC2053 pH electrdoe used Low Temperature (LT), glass forthe sensing bulb. The LT glass is a special glass formulation with a lower resistance when compared to general purpose (GP) glass. This design is beneficial as many food products are stored at lower temperatures.
Built-in Temperature Sensor - The FC2053 pH electrode features a built-in thermistor temperature sensor that is in the tip of the indicating pH electrode. A thermistor temperature sensor provides for a high accuracy temperature reading. The temperature reading is necessary in order to compensate for temperature variations that affect the electrode response. The thermistor temperature sensor is located in the tip of the pH bulb for a fast and accurate temperature measurement that impacts a membrane potential as according to the Nernst equation.
Built-in Amplifier - The FC2053 is an amplified pH electrode. A pH measurement is a very sensitive measurement. Humidity and electrical noise (i.e. pumps, motors and ballasts) will affect the measurement. By incorporating an amplifier into the probe the transmission of the pH measurement from the probe to the meter is unaffected.
